We've been looking for clever ways for the whole family to eat more veggies.... purple pasta might do the trick! ⠀
Insta-Worthy Sweet Potato Pasta 💜
1 cup of purple sweet potato, or orange (which is easier to work with texture wise i find) steamed or roasted ⠀⠀
1-1 1/2 cup of unsweetened plant milk (but we'll use regular)⠀⠀
1 clove of roasted garlic ⠀⠀
1-2 tablespoon nutritional yeast flakes ⠀
1 tablespoon of olive oil or vegan butter ⠀
1 teaspoon fresh lemon juice ⠀⠀
1 teaspoon smoked paprika ⠀⠀
pinch of sea salt (to taste) ⠀⠀
pinch of black pepper (to taste) ⠀⠀
Blend all your ingredients in a high speed blender until smooth, adjusting the thickness to your liking by adding less or more (plant) milk.
