Mama of four and chef, Nealy Fischer, launches her new cooking channel on YouTube, The Flexible Chef

As one of our previous That Mama’s and contributors, Nealy Fischer is no stranger to our Sassy Mama family. As someone who has a passion for living healthily whilst cooking delicious food for her whole family, she has now launched a YouTube channel to share her recipes with everyone. We chat with her and learn more about how she developed a love for cooking and how it’s also inspired her kids to get involved in the kitchen.

Tell us a little bit about yourself.
I’m a mum, wife, yoga teacher, health coach, home chef and student of life. We’ve been living in Hong Kong for 12 years and my mission is to inspire people to eat, move and live well in order to be healthy, happy and free. My days are filled with blog writing, recipe testing, teaching, photographing food and working on my cookbook and videos. That plus raising our four kids! I’m a city girl during the year but a country girl at heart. We’ve just returned from a summer in Montana that counterbalances the madness of this great city. I love to post images from my travel adventures on Instagram.

What was your inspiration behind The Flexible Chef?
I have been actively working on this project my whole life. I began my curiosity in nutrition when I was 11 and over the course of my life I’ve bounced between the extremes of excess and deprivation. These days I eat and cook with a more sensible approach: real food most of the time and treat food some of the time. In The Flexible Chef, I hope to inspire people to take care of their bodies but also enjoy their life by cooking great food, and enjoying it with their loved ones.

Where did your love of cooking begin?
I’ve been cooking in my mum’s kitchen since before I could reach her countertops. Growing up in a Jewish home, food was abundant and I was always kind of obsessed with healthifying mum’s traditional recipes. I always had a love of pretty things and entertaining so I was the designated food stylist at home too! Over the years, I’ve learned the creativity and the flexibility that is necessary when feeding a crowd of diners with different food preferences. Every Friday I share my latest recipes and tips for healthified dining in my newsletter, to ease my readers into their weekend.

What is your kid’s favourite dish that you cook for them and why?
Ooh, you’d have to ask them! Real food: probably chicken adobo with fried rice because it’s satisfying and super flavourful. Treat food: probably gluten-free pizza because who doesn’t love pizza?

How do you incorporate healthy eating when you’re traveling with your family?
Pretty simply. I pack healthy snacks like nuts, edamame, cut up veggies and fruit. We always bring our own lunch or dinner on an airplane. When dining out, we stick with fresh-on-the-go food mostly fish and salads. My son recently went on a long trip and I sent him canned sardines… that was a first but he loved it.

What can we expect to see from your upcoming videos?
We post regular videos on our YouTube channel, Facebook page, and our website. I teach practical and down to earth tips to help you cook delicious and good looking food, without spending all day in the kitchen. You’ll learn to be flexible with substitution tips, food hacks, make-ahead meals and how to deal with messes and flops. Expect gluten-free, fresh and natural “real” food balanced by desserts, muffins, and treats. I often have guests on the show and my kids pop in here and there too!
