In 2012, Chef Peggy Chan started championing the cause of plant-based cuisine in Hong Kong with Grassroots Pantry. In July 2019, Grassroots Pantry closed down to make way for Nectar, a high-end dining concept featuring a progressive, seasonal tasting menu using locally-sourced (and often forgotten) ingredients.
